cocktail friday :: blushing blackberry and mint sparkler

It’s Friday and spring has finally arrived around Seattle, which means we’ll likely spend some of the weekend tending to our garden beds and at the nursery. We hope you have a wonderful spring weekend ahead, complete with some relaxation and your favorite indulgences.

Our Blushing Blackberry and Mint Sparkler is a perfect spring cocktail (or mocktail) – wouldn’t it make for the loveliest wedding cocktail welcome, too?

Recipe yields about 6 glasses:

24 oz. of pink lemonade | 6 oz. good vodka | sparkling water to top | 1/3 cup of fresh blackberries | bouquet of mint plus 6 sprigs | ice

Gently muddle a small bouquet of mint and blackberries with ice (reserving a handful of blackberries to garnish)

Place the muddled concoction in a shaker and add 1 oz. vodka and 4 oz. lemonade. Shake and strain into tall cocktail glasses and top with sparkling water.

Garnish with extra mint sprigs and blackberries.

To make a non-alcoholic version, simply remove the vodka.
